Wild Alaska Pollock
Sourced from the icy ocean waters of Alaska, 100% of our genuine Wild Alaska Pollock is certified as responsibly managed in accordance with the FAO-Based Responsible Fisheries Management (RFM) Certification.
Farm-Raised Salmon
Our Salmon is farm-raised off the coast of Southern Chile. The Salmon is farmed according to the Best Aquaculture Practices (BAP).
Wild Mahi Mahi
Our wild Mahi Mahi is responsibly sourced from the coasts of Peru and Ecuador and is in the process of obtaining the Marine Stewardship Council (MSC) certification.
Shrimp
100% of our Shrimp is sourced from responsibly managed fisheries that are certified sustainable in accordance with Best Aquaculture Practices (BAP).
Langostino Lobster
Our Langostino Lobster is wild-caught in Chile and certified sustainable. This is a seasonal offering, available at certain times of the year. MSC certified.

Our all-natural chicken is raised without antibiotics important for human medicine and is 100% USDA-approved with no artificial ingredients.
All-Natural Steak
Our lean all-natural choice steak is 100% USDA-approved, with no artificial ingredients.
Eggs
We only use cage-free certified, pasteurized eggs and egg ingredients at all locations.
WHOLE INGREDIENTS & PRODUCE
Avocados
We serve 100% Hass avocados — pitted, hand-scooped, and smashed by our kitchens daily to prepare our freshly made guacamole. These avocados are sourced from the regions of Michoacán and Jalisco, Mexico, as well as locally grown farms in California to ensure the highest quality, depending on the time of year.
Lettuce, Cabbage, Onions, Tomatoes & Cilantro
Our herbs, leafy greens & vegetables are harvested by morning, up and down central coast of California, and from Yuma. Our trusted suppliers are committed to responsible farming to protect our natural ecosystems.
Lemons, Limes & Jalapeño
Sourced from various regions in Mexico – Oaxaca, Veracruz, Colima, Jalisco – once these fruits ripen, they are handpicked and conditioned for our kitchens, where we curate fresh, house-made sauces and salsas with the perfect blend of citrus and spice.
GRAINS
Rice & Beans
Cooked from scratch every morning, the rice & beans we prepare are grown and harvested on U.S. soil. Never cooked with fats, never cooked from a can, never fried or refried. Our rice & beans are 100% vegetarian.
Stone Ground Tortillas
The corn we source for our stone-ground tortillas & freshly cooked tortilla chips is 100% California-grown & Non-GMO Project verified.
Our commitment isn’t just about using great ingredients. It’s about the ones we refuse to use.
Additives like artificial flavors, artificial sweeteners,1 added MSG, high-fructose corn syrup,2 food coloring from artificial sources, partially hydrogenated oils and many more with names too difficult to pronounce are never allowed in our kitchen.

ECO-FRIENDLY PRACTICES & PACKAGING
To do our part in preserving our waterways and oceans, we uphold eco-friendly practices & prioritize environmentally safe packaging throughout our restaurants. Some spotlight efforts include, but aren’t limited to:
- Compostable and biodegradable to-go containers, made from molded fiber
- To-go salad bowls made from recycled plastic, RPET – Recycled Post-Consumer Polyethylene Terephthalate #1 PET
- To-go container lids are 100% recyclable.
- Compostable, chlorine-free napkins
- Sustainable Forestry Initiative (SFI) Certified paper cups
- Paper menus made from Forest Stewardship Council (FSC) Certified paper.
- Our dining rooms offer plastic & glass bottle recycling
- Our kitchens recycle oil from our fryers to stop it from going to landfills or down the drain – reducing our impact by ~86,000 gallons a year.
