5 Quick and Easy Meal Ideas for Thanksgiving Week

Without a doubt, Thanksgiving is the biggest cooking and feasting day of the year. If you’re hosting or helping, that probably means you have your hands full with planning, shopping, and prepping in the days leading up to Thanksgiving.

With all the focus on the holiday food, it’s easy for Thanksgiving week dinner plans to fall by the wayside. You still have to eat, so here’s a week’s worth of fast and no-fuss dinner ideas to save the day. Each comes together in 30 minutes or less, and they’re satisfying but not too heavy, so you’ll have plenty of room left for Thanksgiving dinner.

 

A Frittata

Frittatas are fast, customizable, and the ultimate clean-out-your-fridge meal (a bonus when you need every inch of refrigerator space for that large bird). Eggs are the only essential ingredient you need for a frittata. Everything else is flexible and based on what you have on hand. Just sauté some onions and any vegetables you like in a large oven-proof skillet. Add beaten eggs to the pan and bake it in a 350° oven for about 20 minutes or until puffed and golden. Vegetable Soup

A pot of soup is not only satisfying but also another delicious way to use up what you have on hand. All you really need are vegetables and a carton or two of stock. Twice Baked Potatoes

Grab a few Russet or sweet potatoes and cook them in the oven, microwave, instant pot, or air fryer. Slice them open, and stuff them with your favorite fillings like broccoli and cheese, chili, or shredded rotisserie chicken and vegetables. Spread the chips on a sheet pan and top with shredded turkey, black or “no fried” pinto beans, and Mexican street corn. Sprinkle shredded cheddar cheese or crumbled Cotija cheese over everything. Pop it in the oven at 350° for a few minutes until the cheese melts and everything is warm. Add a few dollops of guacamole over everything and if desired, garnish with chopped cilantro and green onion.
